French fries, potato chips, mashed potatoes, potato pancakes, hash browns and every other form of the spud puts the rest of the vegetable world to shame.
Give me an order of thin, salty, crispy crunchy french fries and a foamy glass of beer, please, and I’ll be a happy camper. While not a vodka drinker, I understand there is such a thing as potato beer. How bad could that be?
Fond memories from childhood are of mom standing in front of the stove, tending to potato pancakes sizzling in a cast iron skillet on a Friday during Lent. They were brown and crispy and delicious and always served with strawberries.
I also remember mom’s stuffed peppers served over mashed potatoes.
Cheesy au gratin potatoes with ham.
Sweet potato casserole.
Dad’s American fries.
There is never a bad potato other than a rotten one.
As much as I like all vegetables – peas, carrots, beans – they need to up their game if ever to compete with the blessed, almighty potato.

I am totally with you on this, Mary. Lots of other veggies could take a lesson from the lowly spud. I don’t see anyone making vodka from kale.
Ha! That is correct, Dan. I eat kale, but it’s probably near the bottom of my veggie list. Spuds are the best.

Haha! I’m totally with you, Mary J. I’m a potato fan. I used to joke that one day I’d open a potato restaurant — every dish would be potatoes, because there I have so many favorite potatoes. You do make an excellent case for the versatile potato. In counterbalance, there is me who didn’t grow up eating potatoes very often and still have them rarely. However, recently I discovered the joys of a simple baked russet – crisp outer layer and creamy deliciousness on the inside. I think they could become an obsession.
Mmmm…baked potatoes are a great addition to steak or chicken on the grill. Don’t forget the butter!
Potatoes are my comfort food! Even my sons are all about the potatoes. They play RPG on line and their names are “Mashed Tater” and “Gravy Master”…

You know, I don’t even think about potatoes being a vegetable, I think of them as starch. They’re wonderful. They’re versatile. I’m mashing them today. Yes ma’am, potatoes are delicious!
